Meng Ding Huang Ya, or "Meng Ding Yellow Bud," is a prized yellow tea originating from the slopes of Mengding Mountain in Ya'an, a region with one of China’s earliest recorded tea plantations. Like its sibling Meng Ding Gan Lu, it begins with tender buds hand-plucked from this historic terroir in mid-March, 2024. This tea is crafted by Lu Dan, a recognized inheritor of Meng Ding Huang Ya’s intangible cultural heritage.
However, its crafting process follows a distinct path. Meng Ding Huang Ya undergoes fixation at a slightly higher pan-frying temperature of approximately 160°C, similar to Meng Ding Gan Lu. What truly sets it apart is its signature "Men Huang" (Sealing Yellow) process, where the tea leaves are exposed to high humidity and warm temperatures after fixation. This carefully controlled step allows enzymatic reactions to gently oxidize polyphenols, giving the tea its characteristic yellow hue in both liquor and leaves.
Unlike Meng Ding Gan Lu, Meng Ding Huang Ya is not rolled. Instead, it follows a unique "Three-Step Encasing" process, which includes fixation, two rounds of encasing, seven days of Men Huang, initial drying, three rounds of pan-frying, final drying, and aroma-enhancement. This traditional method requires at least ten days to complete, a stark contrast to Meng Ding Gan Lu, which can be enjoyed the same day it is plucked. The extended processing time refines its flavor and texture, making it a tea of patience and craftsmanship.
Meng Ding Huang Ya embodies a distinct character, seeking a yellow dry leaf hue, a golden infusion, and a soft yellow leaf base. Its flavor profile is defined by a delicate sweetness, a rich and mellow texture, and a refreshing yet lingering aftertaste. Due to its intricate crafting process, limited production, and natural variations in quality, Meng Ding Huang Ya remains a rare and sought-after tea, offering a refined and unique tasting experience.
